Chicken in dark soy sauce

Serving suggestion
A Chinese dinner is not complete if there aren't any chicken dishes. Try making this traditional yet all time favourite chicken dish to impress your guests.
Ingredients
Whole chicken about 1.5Kg
Ginger few slices
Salad onions 2-3stalks
White wine Brown sugar or rock sugar 1tbsp
Seasoning:
Oil 1tbsp
Water 1cup
Dark soya sauce 1cup
Light soya sauce 1/4 cup
Rock sugar 500g
Cooking method
1 - Rinse chicken and wipe dry. Rub some wine evenly over the meat.
2 - Dilute brown sugar with a water, or melt rock sugar with some hot water. Rub evenly over chicken.
3 - Heat oil in wok, fry ginger slices, green onions, then add some wine. Add in rest of seasonings, and bring to the boil.
4 - Put whole chicken into boiled sauce, and keep pouring some hot sauce over top of chicken until cooked.
5 - Take out chicken when cooked, and let cool. Cut into pieces of desired size and place on serving plate.
6 - Heat the sauce again and pour onto chicken just before serving.
Cooking tips
Turning chicken over from time to time will make the chicken cook and colour evenly. When cooking chicken, use low heat to prevent sauce from drying up.
