Fried Eggplant with Crab Meat
Serving suggestion
Good for curing bruises and swellings.
Ingredients
Eggplant 600g
Crab meat 200g
Cooking wine
Salt
Sugar
Pepper
Spring onions
Ginger
Garlic
Oil
Chicken stock
Cornflour
Cooking method
1 - Wash and cut eggplant into small rectangular pieces. Then put in a hot pot of oil and take them out when cooked.
2 - Heat another wok of hot oil and put the spring onion, garlic, ginger and crab meat in and stir fry. When almost cooked, put in pour in a little cooking wine then the fried eggplant.
3 - After a stir, put in chicken soup, sugar, sugar, salt and pepper and stir for a while. When almost done, pour in the cornflour liquid for making the juice thicker.
Cooking tips
Cut all the spring onions, ginger, garlic into small pieces. Before pouring the cornflour in, remember to mix the cornflour with some cold water to make it liquidy first.
