Fried Pear Slices with Chicken

A Chinese dish to go with rice or noodles.
Ingredients
Chicken 250g
1 Pear
Cooking oil
Corn flour liquid
Vinegar
White sugar
Salt
Egg yolk
Cooking wine
Spring onion chopped
Cooking method
1 - Remove skin and seeds of pear then soak in cold water, chicken chopped into pieces and mix with salt, wine, egg yolk, corn flour liquid.
2 - Pot put on fire and wait till half hot then put in chicken pieces. Remove chicken when turn white. Use the oil in pot to cook spring onion. Remove spring onion when cooked. Use the remaining oil in pot to cook the pear slices. Then add in vinegar, salt, cprn flour liquid then finally the chicken pieces. Stir. When cook, serve.
Cooking tips
Corn flour liquid is made with about a little corn flour mixed with water. It depends on how thick you want the sauce to be. The thicker sauce needs a thinker corn flour liquid.
