Herbs & Spices
Chillies - Very hot, available fresh, dried or powdered
Corriander - Bright green leafed herb, with a pungent flavour.
Cornflour - used for thickening
Curry powder - various spices
Five star powder - made from cinnamon, cloves, star-anise, sichuan pepper & fennel seeds
Ginger - available fresh or powdered
Oils
Chilli oil - made from red chillies & vegetable oil.
Very hot
Peanut oil - pressed from ground peanuts.
Sesame oil - made from roasted, crushed white sesame seeds. Used as a flavouring.
Vegetable oil - various oils from various vegetable sources
Sauces
Chillie sauce - made from chillies, salt & vinegar. Available hot or sweet.
Chinese BBQ sauce - thick, sweet & salty. Made from soy beans, garlic, pepper & spices
Hoisin sauce - a thick sweet & spicy sauce made from salted soy beans, onions & garlic
Plum sauce - rich and tangy
Vegetables
Bamboo shoots - shoots of bamboo, available canned
Bean sprouts - fresh sprouts fron various beans, usually mung, soy, alfalfa or snow pea beans.
Choy sum - popular variety of flowering cabbage
Lemon grass - lemon smelling & tasting, sharp-edged grass
