Hot and Sour Seafood Soup

Ingredients - optional suggestions
100g shrimp/prawn (medium size)
1 squid
1 crab
1 tomato (large)
1 red chilli pepper
1 lime
50g mushroom
1 stalk lemon grass
2-3 tbsp Thai style chilli sauce
750 ml soup stock
1 tsp garlic (crushed)
1 small can coconut milk
Salt and pepper
1 tsp sugar
1 tbsp oil
Cooking method
1 - Rinse and quarter tomato; slice mushroom, cut lemon grass into segments; deseeded and sliced red chilli pepper
2 - Wash the prawns, de-vein and shell without removing the tails; wash and cut crab into medium sized pieces; wash squid, remove head, tentacles, and innards from the squid, rice. Cut a few grooves into the squid pieces before cooking, so that they will curl up nicely.
3 - Heat oil in wok, fry garlic till fragrant; add chilli sauce, tomato, mushroom, lemon grass and chilli pepper, stir fry till well mixed. Add stock and bring to boil; add prawns, crab and squid pieces.
4 - Wash and halve the lime, squeeze lime juice into the soup, add lime and sugar, mix well.
5 - Return to boil, add coconut milk, cover and simmer till boil again.
Cooking tips
Instead of can coconut milk, fresh squeezed coconut juice can serve even a better taste
