Rice

Boiled rice - Bring water to the boil in a large saucepan, add the rice and stir to separate the grains. Boil uncovered for the reccomended time (see below)or until the rice is tender. Drain excess water and fluff up rice with a fork. An electric rice cooker or rice steamer will always give excellent results. It is not usually preferable to rinse cooked rice.

Microwaved rice - Add rice to boiling water in a microwave safe bowl or container. Cook on high power for the reccomended time or until rice is tender. Stir half way through cooking. When cooked remove from microwave, stand for 5 minutes and then fluff rice with a fork.

Baked rice - Pre-heat the oven to a moderate temperature. Add rice to boiling water in an ovenproof dish. Stir well and cover. Bake for the reccomended time or until the rice is tender. Fluff rice with a fork.

Absorption method - Rinse un-cooked rice until water runs clear. Combine water and rice in a heavy base saucepan. Cover and bring to the boil. Reduce heat to as low as possible and cook for the reccomended time. Do not remove lid during cooking. Remove pan from heat and stand whilst covered for 10 minutes. Fluff with a fork.

Reheating cooked rice - Place rice in metal colander. Place over pan of simmering water, cover and heat - Add a little water to a frying pan, bring to the boil and add the rice. Heat until the water is absorbed and evaporated. - Spread rice in a greased oven-proof dish. Sprinkle with a little water and dot with some butter. Cover and heat in moderate oven. - Heat some butter or oil in a wok. Add rice and heat. - Place rice in microwave safe dish, cover and het on high for a few seconds until warm.

Some facts about rice - White rice triples in bulk after cooking - Store un-cooked rice in a cool dark place - Leftover rice will keep for up to 2 days in a fridge - Cooked rice freezes well for up to 2 months - 1 cup of un-cooked rice weighs about 200g
