Hot Spicy Codfish with Garlic

It is a popular fish cooked in a Chinese way which allows the best fragrant and texture to come out.
Ingredients
2 slices of codfish about 450g
8-10 braids of garlic
1tbsp hot bean paste
1tbsp diced spring onion
1tbsp dessicated coconut
Seasoning
Marinade
2/3 tsp salt
½ tbsp ginger juice
1 tbsp wine
a pinch of pepper
Seasoning
¾ cup water
1½ tbsp light soya sauce
½ tbsp sugar
a dash of sesame oil
a few shakes of pepper
Cooking method
1 - Rinse codfish pieces and wipe them dry. Blend marinade and brush on carp pieces. Leave them for about 15 minutes. Chop garlic for later use.
2 - Pat marinated codfish with plain flour, fry pieces in plenty of oil till golden and done. Remove and soak up excess fat.
3 - Heat 2 tbsp oil to sauté garlic and hot bean paste. Pour in seasoning and bring mixture to boil. Put in fried codfish, lower heat and stew ingredients for a while. When sauce becomes rich, dish up codfish pieces. Add dessicated coconut and diced spring onion to remaining sauce. Pour sauce over fish and serve hot.
