Steam glutinous rice with crab

Ingredients
10 taels Meat Crab
4 taels Glutinous Rice
3 tbsp Plain Rice
1 Salty Egg Yolk
1 tael Pork
2 Mushrooms
3 tbsp Dry Shrimps
1/2 tael Preserved Chinese Ham
2 Shallots
4 slices Ginger
2 stalks Spring Onion
1 sheet Lotus Leave
Seasoning
3/4 tbsp Light Soy
1/4 tsp Sugar
2 tsp Chinese Wine (Chekiang Wine)
5 tbsp Hot Water
Cooking method
1 - Bring 3 cups of water to boil, add lotus leave. Cook til softens.
2 - Slice pork, set aside. Mince shallot, set aside.
3 - Wash meat crab, cut into pieces. Combine glutinous and plain rice and wash. Soak for 1 hour, set aside.
4 - Soak well dried mushrooms and shrimps, drain and set aside. Remove hard stem from mushroom.
5 - Dice preserved ham, mushroom. Mince shallot and spring onion. Slice salted egg yolk into 6 pieces of similar size.
6 - Spread white linen inside steamer, add rice mixture, steam for 25 minutes or 70% done. Remove from steamer.
7 - Heat 1 tbsp of oil in wok, fragrant shallot, add dry shrimps, mushroom, pork. Stir-fry well. Add preserved Chinese ham and all seasoning sauce. Mix well..
8 - Spread lotus leave inside steamer, add fried rice, diced salted egg yolk, crab, ginger and spring onion. Steam for 12 minutes, dish up. Garnish with spring onion before serving.
