Turnip Dumplings
Ingredients
160g Glutinous Rice
Flour
6 tbsp
Tapioca starch
200g
White Turnip, shredded
2 black mushroom, soaked until tender
Szechwan Preserve:
2 tbsp vegetables minced
50g
cornstarch
2 tbsp
dry shrimps
Soup:
1 cup stock
1 cup water
Seasoning:
½ tbsp light soy
1 tsp sugar
¼ tsp salt
to taste
pepper
to taste
sesame oil
Cooking method
1 - In a mixing bowl, combine glutinous rice flour, tapioca flour and 2/3 cup salt water, until the dough pulls together. Covered with a clean damp cloth, set aside.
2 - Drain white turnip, wash and dice dried shrimps Szechwan preserved vegetables and black mushroom.
3 - Heat 1 tbsp oil in a wok, fragrant dried shrimp, brown white turnip, black mushroom, Szechwan preserved vegetable, add seasoning. Remove from wok, set aside.
4 - Moisten hands and shape dumplings, fill in the center of each dumpling 1 portion of the mixed ingredients. Use only half of the ingredients for filling.
5 - Boil water in a bowl, carefully slide in the dumplings, cook till they float to the surface. Add the rest of the filling. Serve immediately.
